Ingredients for Eggplant Tart by Cyril Legnac
To make this pie, Cyril Legnac submitted to you a ready-made puff pastry. But it’s up to you to make it a home! And if the task seems complicated to you, shortcrust pastry can do the trick, too.
- 3 eggplant
- 1 round puff pastry
- A few coriander leaves
Tomato spread:
- 150 grams of feta or fresh yogurt, not very creamy
- 120 grams of sun-dried tomatoes preserved in olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon coriander powder
- 1 clove of garlic, peeled and de-germinated
- A few coriander leaves
- 1 lemon

Preparation of eggplant tart by Cyril Legnac
The President You succeed in betting on the perfect family dish for dinner and lunch in just a few steps. I don’t mind spending an hour in the kitchen. 10 minutes of preparation and 30 minutes of cooking is enough. So, leave?
- Preheat the oven to 190 degrees Celsius. Cut the eggplant into slices and season with the cayenne flower. Place them in a very hot skillet with a little olive oil or on a baking sheet. Reserve on a plate.
- Pour cream cheese, sun-dried tomatoes, garlic, and spices into a blender. Mix and add coriander leaves with lemon juice.
- Place the puffed dough on the work surface, then spread the mixture in its center, leaving a distance of 5 cm on the edges. Then place the eggplant slices in the bottom of the pie dish and place the puff pastry on top, with the fat touching the eggplant. Seal the edges and then prick the pie with a fork. Bake for 30 minutes. After that, all you have to do is flip the dish over and you’re good to go!
